Use a dish shortlist, then check ingredients
Common Beijing choices include roast duck (北京烤鸭), zhajiang noodles (炸酱面), copper-pot mutton hotpot (铜锅涮肉), dumplings (饺子) and mung-bean milk (豆汁). The name does not reveal every ingredient.
- Roast duck: ask about sauce, pancakes and shared preparation
- Zhajiang noodles: the sauce often contains pork; confirm before ordering
- Mutton hotpot: identify broths, dipping sauces and shared utensils
- Dumplings: ask for the filling, not just the shape
- Douzhi has a strong fermented flavour; order a small portion first

Complete the card before relying on it
Build a low-risk first-night meal
Choose a restaurant near the hotel with table service and enough time for staff to check ingredients. Keep a packaged backup food you already tolerate. Do not make a night market your first allergy test after a long flight.
A blank allergy template is a stop sign, not a finished card
A restriction can appear in broth, cooking oil, seasoning, sauce or garnish. Before travel, replace every blank with the exact ingredient and its relevant hidden forms using clinician-approved wording. If that work is not complete, or staff cannot verify the result, use known packaged food or do not eat.
Separate preference from medical risk
For preference, the card is an ordering tool. For an allergy or coeliac disease, use your clinician-approved emergency plan and medication. If staff cannot confirm ingredients or cross-contact controls, use labelled backup food or leave.
Do not eat when the answer stays ambiguous
Polite uncertainty is still uncertainty for a serious allergy.
- Staff cannot name the ingredients
- The card is passed around without a clear answer
- Shared oil or cookware cannot be checked
- The dish arrives with an unexplained sauce or garnish
- Your prescribed emergency plan is not accessible
When the plan stops working
- Staff cannot confirm ingredients
Do not negotiate the risk down. Use the packaged backup or leave for a staffed restaurant that can check.
- You suspect an allergic reaction
Follow your prescribed emergency plan and seek emergency help. In China, call 120 for an ambulance.
- The translation is too broad
Replace the blank with the exact ingredient and add hidden forms before showing it. Keep the English original beside the Chinese.
